Cheesy Spinach Pie
A savory spinach pie is made rich with cream cheese, cheddar cheese, and eggs, and can be enjoyed warm or at room temperature.

Preheat oven to 375 F.

Sauté onions in butter until translucent, then add spinach and cook until water is released and spinach collapses. Remove from heat.

Drain the spinach mixture using a cheesecloth-lined colander, squeezing out all water, then let it cool.

Beat cream cheese with milk, lemon juice, dry mustard, salt, onion powder, pepper, and nutmeg. Incorporate eggs until combined. Stir in the cooled spinach-onion mixture and 1 cup of Cheddar cheese.

Pour into a pie shell, sprinkle with bacon bits, and bake for 35 to 40 minutes until set.

Remove the pie, sprinkle with the remaining Cheddar cheese, and return to the oven for 5 additional minutes until melted.

Let cool for 15 minutes before serving.
