Instructions

  1. Preheat oven to 375 F and lightly grease a baking sheet.

  2. Slice potatoes in half lengthwise, scooping out the pulp to leave 1/3 inch thick skins.

  3. Deep-fry skins for about 5 minutes until crisp; drain on paper towels.

  4. Fill each skin with cheese and 1 teaspoon vegetarian bacon bits.

  5. Bake for 10 minutes, or until cheese melts.

  6. Top with scallions and a dollop of sour cream.
