Instructions

Preheat oven to 375 F and lightly grease a baking sheet.

Slice potatoes in half lengthwise, scooping out the pulp to leave 1/3 inch thick skins.

Deep-fry skins for about 5 minutes until crisp; drain on paper towels.

Fill each skin with cheese and 1 teaspoon vegetarian bacon bits.

Bake for 10 minutes, or until cheese melts.

Top with scallions and a dollop of sour cream.
