Instructions

  1. Preheat oven to 350F.

  2. Spray a muffin tin with cooking spray.

  3. Peel and slice potatoes thinly (about 1/10 inch thick).

  4. Melt butter and garlic, then stir in cream, salt, and pepper.

  5. Stack half the potato slices in each muffin cup, drizzle with half the cream mixture and thyme, then sprinkle with half the cheese.

  6. Add the remaining potato slices, drizzle with the remaining cream mixture and thyme.

  7. Cover the tin loosely with foil and bake for 35 minutes; uncover, sprinkle with remaining cheese, and bake for 10 more minutes until golden and tender.
