Cheesy Mashed Potato Casserole With Sour Cream

Instructions

  1. Preheat the oven to 400 F and butter a 2-quart baking dish.

  2. Peel and cut potatoes into chunks; place them in a pot, cover with water, add 2 teaspoons salt, and bring to a boil.

  3. Cover, reduce heat, and boil for about 20 minutes until tender, then drain thoroughly.

  4. Mash the drained potatoes with 6 tablespoons butter, sour cream, milk, green onions, and 3/4 cup cheddar cheese, seasoning with salt and pepper to taste.

  5. Transfer the mixture to the prepared baking dish and drizzle with the remaining 2 tablespoons of melted butter.

  6. Bake for 25 minutes until lightly browned, then scatter the remaining cheddar cheese on top and bake a few more minutes until melted.
