Instructions

  1. Preheat the oven to 375 F.

  2. If using fresh chorizo, brown it in a skillet for about 5 minutes until cooked.

  3. Arrange tortilla chips on a parchment-lined baking sheet.

  4. Top chips with shredded cheese and cooked chorizo.

  5. Create 6 wells, crack an egg into each, and season with salt and pepper.

  6. Bake on the lowest rack for approximately 15 minutes until egg whites are set and yolks reach desired doneness.

  7. Optionally add more cheese, then drizzle with taco sauce and top with sliced avocado and cherry tomatoes.

  8. Garnish with sour cream, sliced jalapenos, scallions, cilantro, and lime. Serve immediately.
