Cheesy Béchamel Sauce

Instructions

  1. In a medium saucepan, melt 5 tablespoons unsalted butter over medium heat, then stir in 1/4 cup all-purpose flour to create a roux and cook for 1 to 2 minutes.

  2. Gradually whisk in 2 cups whole milk, allowing the mixture to thicken over 10 to 20 minutes, reducing heat to medium-low if necessary.

  3. Stir in 1/2 teaspoon kosher salt, 1/4 teaspoon freshly ground black pepper, 1/4 teaspoon nutmeg, 1/2 cup grated sharp cheddar cheese, 1 tablespoon Parmesan cheese, and an optional dash of hot sauce.
