Instructions

  1. Line two baking sheets with parchment or foil; set one aside.

  2. Scoop cheesecake onto a prepared sheet and form into balls, then insert a lollipop stick into each.

  3. Freeze the cheesecake balls on the sheet for at least two hours until very firm.

  4. Melt candy coating in the microwave, stirring every 30 seconds until smooth, adding shortening if needed for fluidity. Prepare desired toppings.

  5. Quickly dip each frozen cheesecake pop into the melted coating, ensuring full coverage and a seal around the stick. While wet, add toppings, then place on the reserved lined baking sheet.

  6. Repeat with remaining pops; re-melt coating in brief intervals as needed.
