Instructions

  1. Combine 4 eggs, 1/2 cup water, 1/2 cup milk, 1/2 teaspoon salt, and 1 cup all-purpose flour; let the batter rest for 30 minutes.

  2. Heat a small skillet with a pat of unsalted butter over medium heat. Whisk the rested batter, then pour 1/4 cup into the pan, swirling to create a thin crepe; cook without browning, then flip and cook briefly before transferring to a towel.

  3. Continue this process with the remaining batter and butter, stacking the crepes.

  4. In a large bowl, mix 1 pound dry curd ricotta cheese, 1 tablespoon melted unsalted butter, 1 egg yolk, 2 teaspoons vanilla extract, and 1/4 cup granulated sugar for the filling.

  5. Place a crepe on a work surface, add 1-2 tablespoons of filling near one edge, then fold and roll it up.

  6. Fry the assembled blintzes in butter over medium-low heat until golden brown on both sides, then serve with optional toppings.
