Cheese and Bacon Cornbread

Preheat the oven to 400 F.

In a bowl, combine corn muffin mix with the egg and milk. Stir in most of the shredded cheese and bacon, reserving 1 tablespoon of each for later.

Pour the batter into a greased and floured 8-inch square baking dish.

Bake for 15 minutes, then sprinkle the reserved cheese and bacon over the top.

Continue baking for 10 minutes, or until the cornbread is browned and firm.
