Cheddar Mashed Potato and Ham Bake Recipe

Instructions

  1. Preheat the oven to 350 F.

  2. Butter a 2 1/2- to 3-quart baking dish.

  3. Melt butter in a skillet, then sauté celery and onion until tender.

  4. Brown the ham, then stir in soup, 1/2 cup milk, salt, and pepper.

  5. Warm potatoes if cold. Whisk eggs and remaining 1/2 cup milk, then mix into potatoes with green onions and parsley.

  6. Reserve 1/3 cup cheese for topping; add the remaining cheese to the potato mixture.

  7. Spoon the ham mixture into the baking dish. Spread potatoes over it, then top with reserved cheese.

  8. Sprinkle with pepper. Bake for 40 to 50 minutes until lightly browned.
