Instructions

  1. Preheat the oven to 375 F and lightly butter a 2-quart casserole dish.

  2. Place sliced potatoes in a medium saucepan, cover with water, and boil for 4 to 5 minutes until just tender; drain well.

  3. Melt butter in a saucepan over medium heat, then stir in salt, pepper, mustard, paprika, and flour until smooth and bubbly.

  4. Whisk in cream and milk, cooking until the sauce thickens.

  5. Stir 1 1/2 cups of shredded cheese into the sauce until melted.

  6. Combine the sauce with the drained potatoes, then transfer to the prepared baking dish.

  7. Top with the remaining cheese and bake for 25 to 35 minutes, or until golden brown and bubbly.
