Instructions

  1. Heat 2 tablespoons oil in a wok or large frying pan. Whisk eggs with salt and pepper.

  2. Pour whisked eggs into the hot oil; fry 1 to 2 minutes per side until cooked.

  3. Remove the cooked egg, coarsely chop, and set aside.

  4. Add the remaining 2 tablespoons oil to the wok. Sauté bell pepper, white scallion, and ginger for 2 to 3 minutes.

  5. Stir in the meat and sauté until heated through.

  6. Add cooked rice, green scallions, and soy sauce; cook, stirring constantly, until well heated.

  7. Stir in the chopped egg. Serve immediately.
