Chasseur Sauce

A classic Chasseur sauce features sautéed mushrooms and a white wine reduction, traditionally paired with game meats.

Instructions

  1. Heat butter in a heavy-bottomed saucepan over medium heat until frothy.

  2. Add mushrooms and shallots; sauté for approximately 5 minutes until soft and translucent.

  3. Pour in the wine, bring to a boil, then reduce heat and simmer until the liquid decreases by three-fourths.

  4. Stir in demi-glace and diced tomato, then continue to simmer for about 5 minutes.

  5. Mix in chopped parsley and serve immediately.
