Instructions

  1. Combine sugar and lemon juice, stirring until dissolved.

  2. Melt butter in a saucepan; cook onions until soft.

  3. Pour in wine, bring to a boil, then simmer until reduced by two-thirds.

  4. Add demi-glace and simmer for 10 minutes.

  5. Strain the sauce, then stir in mustard and the sugar-lemon mixture.

  6. Garnish with chopped cornichons and serve.
