Charcutière Sauce

Instructions

Combine sugar and lemon juice, stirring until dissolved.

Melt butter in a saucepan; cook onions until soft.

Pour in wine, bring to a boil, then simmer until reduced by two-thirds.

Add demi-glace and simmer for 10 minutes.

Strain the sauce, then stir in mustard and the sugar-lemon mixture.
