Char Siu: Chinese Barbecue Sauce

Instructions

  1. Combine all ingredients except salt in a double boiler, or directly in a saucepan with frequent stirring to prevent sticking.

  2. Simmer over medium-low heat for 10 minutes until the sauce thickens.

  3. Taste the sauce and add salt if desired.

  4. Remove from heat, then cool for 5 to 10 minutes.

  5. Use immediately or transfer to a lidded container and refrigerate once fully cooled.
