Instructions

Heat peanut oil in a wok over medium heat.

Sauté shallots, garlic, shrimp paste, sugar, and optional chile paste until fragrant.

Increase heat, add pork slices, and drizzle with soy sauce; stir-fry for one minute until pork is no longer pink.

Add shrimp and chives; stir-fry for another minute.

Incorporate rice noodles and more soy sauce; stir-fry until noodles are heated through.

Add bean sprouts and eggs; stir-fry, breaking up eggs and cooking until set and sprouts are slightly wilted.
