Instructions

  1. Start boiling salted water in a large pot.

  2. Drain soaked chickpeas. Add them to the boiling water, reduce heat to medium, and cook partially covered for 35-45 minutes until tender. Drain and set aside.

  3. In a large skillet, heat ghee over medium heat. Add mustard seeds, cumin seeds, asafoetida (if using), and green chili; cook until seeds crackle.

  4. Stir in ginger-garlic paste and onion; sauté for 4-5 minutes until golden brown.

  5. Add red chili powder, roasted ground cumin, yellow chili powder (if using), garam masala, and salt; stir constantly for 30 seconds until fragrant.

  6. Add cooked chickpeas, stir well, and cook for 5-6 minutes until coated. Stir in amchur and cook for 2 more minutes until combined. Adjust salt to taste.

  7. Remove from heat, then stir in cilantro and lemon juice.

  8. Garnish with julienned ginger and serve.
