Champagne White Chocolate Truffles

Instructions

  1. Bring heavy cream to a boil in a small saucepan.

  2. Pour the hot cream over chopped white chocolate in a bowl, let sit for 1 minute, then whisk until melted and thick.

  3. Whisk Champagne into the chocolate mixture, then add butter and whisk until smooth.

  4. Press plastic wrap onto the surface and refrigerate until firm enough to scoop.

  5. Line a baking sheet, then scoop the firm mixture into small balls and roll them smooth with confectioners' sugar-dusted hands.

  6. Melt white chocolate candy coating.

  7. Dip each truffle into the melted coating, place on the lined baking sheet, and apply gold leaf immediately if desired.
