Champagne Jello Shots

Instructions

Lightly spray and wipe a muffin pan or baking dish.

In a pot, combine sparkling wine and 2 ounces lemon-lime soda, then sprinkle with gelatin and let bloom for 2 minutes.

Heat the mixture on medium-low, whisking until the gelatin dissolves without boiling.

Remove from heat, stir in the remaining lemon-lime soda and food coloring, then cool slightly.

Pour the mixture into the prepared pan.

Refrigerate for 4 to 12 hours until set.

Carefully remove the jello shots from the muffin pan, or cut into squares and remove from a baking dish.
