Instructions
-
Preheat the oven to 350°F and line muffin tins with paper liners.
-
Combine flour, baking powder, and salt in a medium bowl; set aside.
-
In a large bowl, beat egg whites until stiff peaks form; set aside.
-
In a separate large bowl, beat butter until smooth, then gradually add granulated sugar, beating until light and fluffy.
-
Beat in egg yolks and vanilla extract.
-
Alternately add the flour mixture and champagne to the butter mixture, beating on low speed until just combined.
-
Gently fold in the beaten egg whites into the batter in two additions until incorporated.
-
Spoon batter into prepared muffin cups, filling each about 3/4 full.
-
Bake for 15 minutes, or until a skewer inserted into the center comes out clean; cool in pans for 5 minutes, then transfer to a wire rack to cool completely.
-
For the frosting, beat butter until smooth in a large bowl. Gradually beat in powdered sugar and vanilla, then slowly add champagne 1 tablespoon at a time until the desired consistency is reached.
-
Pipe or spread frosting onto cooled cupcakes.
-
Decorate with sanding sugar, silver/gold decorations, or edible gold leaf if desired.
