Instructions

  1. Preheat the oven to 350°F and line muffin tins with paper liners.

  2. Combine flour, baking powder, and salt in a medium bowl; set aside.

  3. In a large bowl, beat egg whites until stiff peaks form; set aside.

  4. In a separate large bowl, beat butter until smooth, then gradually add granulated sugar, beating until light and fluffy.

  5. Beat in egg yolks and vanilla extract.

  6. Alternately add the flour mixture and champagne to the butter mixture, beating on low speed until just combined.

  7. Gently fold in the beaten egg whites into the batter in two additions until incorporated.

  8. Spoon batter into prepared muffin cups, filling each about 3/4 full.

  9. Bake for 15 minutes, or until a skewer inserted into the center comes out clean; cool in pans for 5 minutes, then transfer to a wire rack to cool completely.

  10. For the frosting, beat butter until smooth in a large bowl. Gradually beat in powdered sugar and vanilla, then slowly add champagne 1 tablespoon at a time until the desired consistency is reached.

  11. Pipe or spread frosting onto cooled cupcakes.

  12. Decorate with sanding sugar, silver/gold decorations, or edible gold leaf if desired.
