Chamomile "Herbal Tea"-Infused Vodka

Instructions

  1. Insert chamomile into a vodka bottle using a funnel, crushing spices if needed to fit.

  2. Cap the bottle, shake well, and steep for approximately 12 hours, or to taste.

  3. Strain the mixture through a fine mesh strainer and funnel into a clean bottle; a second filtering with cheesecloth is optional.

  4. Discard the chamomile flowers, then add simple syrup to the vodka if desired.

  5. Serve straight, over ice, with seltzer, or as a base for cocktails.
