Instructions

  1. Preheat the oven to 350°F.

  2. Lightly crush cardamom and black pepper.

  3. Toast crushed cardamom and pepper along with cloves, cinnamon, fennel, and coriander on a cookie sheet for five minutes until aromatic.

  4. Combine toasted spices, ginger, vanilla (if using), sugar, and water in a small pot over medium heat.

  5. Bring to a boil, then simmer for five to ten minutes, stirring often.

  6. Strain the syrup through a fine-meshed sieve and pour into a clean jar with a tight-fitting lid.
