Cevapcici Balkan Sausage

Balkan cevapcici is a traditional casing-less sausage, popular in Eastern European cuisine, made from lamb or a combination of various meats.

Instructions

  1. Preheat the oven broiler if using this cooking method.

  2. Combine beef, pork, lamb, garlic, chopped onions, and salt in a large bowl; knead thoroughly.

  3. Fry a small patty to taste and adjust seasonings in the raw mixture as desired.

  4. Refrigerate the meat mixture for a minimum of one hour, or ideally overnight.

  5. Roll the mixture into 3/4-inch diameter cylinders and cut into 4-inch links.

  6. Chill the formed sausages for an additional hour to firm.

  7. Cook by broiling on a charcoal grill or a preheated oven broiler rack 4 to 6 inches from the flame for 4 minutes per side, until no longer pink. Alternatively, pan-fry in a large skillet over high heat for a total of 8 minutes, turning frequently.

  8. Serve immediately with chopped raw onion.
