Instructions

Melt bacon fat or butter in a saucepan; sauté onions and garlic until translucent.

Add stock, bring to a boil, then stir in potatoes. Return to a boil, reduce heat, and simmer until tender.

Season to taste. For stronger garlic, add 3 crushed cloves. Serve with croutons and cheese.
