Instructions

  1. Divide egg noodles into two large bowls.

  2. Heat oil in a frying pan, then sauté garlic and ginger until fragrant.

  3. Add pork and offal, season with fish sauce, and cook until the meat absorbs the sauce and the liver is done.

  4. Distribute cooked meat evenly into the two bowls.

  5. Crack an egg into each bowl over the noodles and meat.

  6. Pour simmering broth over the contents of each bowl.

  7. Top with crushed chicharron and garnish with sliced scallions. Serve immediately with kalamansi or lime and extra fish sauce.
