Cauliflower Potato Salad

A simple, low-carb cauliflower salad makes an ideal side dish for picnics and barbecues.

Instructions

  1. Bring a few inches of water to a boil in a steamer pot.

  2. Combine red onion, celery, chopped eggs, scallions, and pickles in a large bowl.

  3. Steam cauliflower for 8-10 minutes until tender, then set aside to cool.

  4. Whisk together mayo, sour cream, mustard, pickle juice, dill, and parsley; season with salt and pepper to taste.

  5. Add the prepared dressing and cooled cauliflower to the large bowl with other ingredients; toss thoroughly to coat.

  6. Garnish with paprika and chopped parsley if desired.
