Instructions

  1. Preheat the oven to 400 F and grease a 2-quart baking dish.

  2. Toss cauliflower with olive oil, salt, and pepper, then roast on a baking sheet for 10 minutes until crisp-tender. Reduce oven temperature to 375 F.

  3. Heat milk, cream cheese, mustard, turmeric, and garlic powder in a saucepan over medium-low heat; season with salt and pepper. Whisk until creamy, then remove from heat and stir in cheddar cheese.

  4. Combine the roasted cauliflower with the cheese sauce in a large bowl, mix well, and adjust seasoning.

  5. Pour the mixture into the prepared baking dish and top with Parmesan cheese.

  6. Bake for 20 minutes until bubbly and browned; broil for 1-2 minutes for extra browning, then garnish with chives if desired.
