Cauliflower Latkes (Pancakes)

Instructions

  1. Start boiling water in a large stockpot, then add cauliflower florets and simmer partially covered for 15-20 minutes until fork-tender.

  2. Drain and lightly mash the cauliflower, leaving some texture, then set aside to cool.

  3. In a mixing bowl, combine the cooled cauliflower with beaten eggs and flour or matzo meal, mixing until a batter forms, adding more flour if needed. Season with salt and pepper.

  4. Preheat the oven to 200F, line a plate with paper towels, and heat a few tablespoons of oil in a large skillet over medium-high heat.

  5. Drop batter by tablespoonfuls into hot oil, flatten slightly, and fry for 3-5 minutes per side until browned and firm.

  6. Transfer fried latkes to the paper towel-lined plate to drain, then place them on a baking sheet to keep warm in the oven.

  7. Add more oil as needed and continue frying remaining batter in batches. Serve hot.
