Cauliflower Cheese With Leeks

Instructions

  1. Preheat oven to 395 F and start boiling water for steaming.

  2. Remove cauliflower leaves and stalk, cut a deep cross in the stem, then steam whole until slightly tender but still firm.

  3. Remove cauliflower from heat and cool.

  4. Melt butter in a large saucepan over medium heat, add finely chopped leeks, and cook until slightly softened. Set aside 1 tablespoon of cooked leeks.

  5. Stir flour into remaining leeks for 2-3 minutes.

  6. Stir in salt.

  7. Increase heat to medium, add all milk, and stir briskly for about 5 minutes until a thick, glossy, and slightly runny sauce forms.

  8. Stir in grated cheese until melted, then remove from heat.

  9. Break cooled cauliflower into florets and arrange in a single layer in a greased baking dish.

  10. Pour cheese and leek sauce over cauliflower. Top with extra grated cheese, reserved leeks, and black pepper.

  11. Bake for approximately 20 minutes until bubbling and golden. Ensure cauliflower is cooked through; bake longer if needed.
