Instructions

  1. Preheat the oven to 425 F and line a baking sheet with parchment paper. Grate cauliflower using a box grater or food processor.

  2. Combine grated cauliflower, eggs, 1 cup mozzarella, Parmesan, garlic powder, oregano, salt, and pepper in a large bowl; stir to form a loose dough.

  3. Transfer dough to the prepared baking sheet and pat into a 1/2-inch thick rectangular crust.

  4. Bake for about 25 minutes until golden brown and dry.

  5. Melt butter, mix with minced garlic, and drizzle over the crust.

  6. Sprinkle remaining 1 1/2 cups mozzarella and optional red pepper flakes over the crust. Bake for 5 to 10 minutes until cheese melts.

  7. Remove from oven and top with optional chopped parsley.

  8. Slice into sticks and serve immediately with marinara sauce.
