Instructions

  1. Preheat the oven to 350 F and grease a 2-quart baking dish.

  2. Boil or steam the cauliflower until just tender, then drain thoroughly.

  3. In a large saucepan, melt 4 tablespoons butter over medium heat, then stir in the flour and cook for 2 minutes. Season with salt and pepper.

  4. Gradually whisk in the milk, cooking until the sauce is thickened and bubbly.

  5. Stir in the mustard and cheese until the cheese is melted.

  6. Fold the drained cauliflower into the cheese sauce and spoon the mixture into the prepared baking dish.

  7. Combine the breadcrumbs with parsley, paprika, and 2 tablespoons melted butter, then sprinkle over the casserole.

  8. Bake for 15 to 20 minutes, or until bubbly and lightly browned.
