Catalan Style Chicken (Pollo a la Catalana) Recipe

Instructions

  1. Soak prunes and raisins in water for 4 hours.

  2. Cut chicken into serving pieces, season with salt and pepper, then brown in olive oil in a large frying pan.

  3. Transfer browned chicken to a large pot.

  4. Drain soaked prunes and raisins; sauté them with pine nuts in the same frying pan.

  5. Add chopped onions, sauté, then add chopped tomatoes and cook for 5 minutes. Stir in chicken broth and simmer for 10 minutes.

  6. Pour the sauce over the chicken in the pot and simmer until tender. A few minutes before serving, stir in breadcrumbs to thicken and add wine; simmer briefly.

  7. Adjust salt to taste and serve with white rice.
