Catalan Spinach (Espinacas a la Catalana)

Instructions

  1. Wash and trim spinach stems, then steam for 2 to 3 minutes.

  2. Remove spinach and drain thoroughly.

  3. In a large frying pan, heat olive oil over medium heat and sauté sliced garlic for 1 to 2 minutes.

  4. Add currants and pine nuts, continuing to sauté for 1 minute.

  5. Stir in the drained spinach, mixing to coat, and season with salt to taste.

  6. Lightly toast bread slices, cut into quarters, and serve alongside the spinach.
