Dice the garlic, onions, tomatoes, carrot, celery, and leek.

Heat olive oil in a heavy-bottomed pot or pressure cooker; brown the cubed stew meat for 3-4 minutes.

Stir in flour, then wine, and cook for 1 minute.

Add the diced vegetables and stir well.

Place the halved baking chocolate into the pot.

Pour in beef stock, stir, and bring the mixture to a boil.

If using a standard pot, partially cover, reduce heat to a simmer, and cook for 1 to 1.5 hours until the meat is tender.

If using a pressure cooker, lock the lid and cook on high pressure for 15 minutes. Allow pressure to release naturally, then remove the lid and simmer uncovered for 10 minutes to thicken.
