Instructions

  1. Dice the garlic, onions, tomatoes, carrot, celery, and leek.

  2. Heat olive oil in a heavy-bottomed pot or pressure cooker; brown the cubed stew meat for 3-4 minutes.

  3. Stir in flour, then wine, and cook for 1 minute.

  4. Add the diced vegetables and stir well.

  5. Place the halved baking chocolate into the pot.

  6. Pour in beef stock, stir, and bring the mixture to a boil.

  7. If using a standard pot, partially cover, reduce heat to a simmer, and cook for 1 to 1.5 hours until the meat is tender.

  8. If using a pressure cooker, lock the lid and cook on high pressure for 15 minutes. Allow pressure to release naturally, then remove the lid and simmer uncovered for 10 minutes to thicken.

  9. Serve the stew with French-style bread over a bed of white rice.
