Instructions

  1. Preheat 2 inches of oil in a frying pan or deep fryer to 350 F.

  2. Peel and cut yuca into 1/2-inch pieces, then fry for 6 to 8 minutes until fork-tender and drain.

  3. Coat a mortar or mashing bowl with olive oil, then pound or mash half a clove of garlic with a pinch of salt to form a paste.

  4. Add the fried yuca and diced bacon to the bowl with the garlic paste, then thoroughly pound or mash until smooth.

  5. Divide the mixture into 6 equal portions, then use a spoon to press each portion into a half-dome shape, scraping it out of the mortar or using a small condiment bowl as a mold.
