Carrots With Fresh Herbs

Instructions

  1. Prepare carrots by washing, peeling, trimming, and halving crosswise, or lengthwise if large.

  2. Heat olive oil in a 12-inch skillet over medium-high heat. Arrange carrots in a single layer, then sprinkle with onion, salt, and pepper.

  3. Reduce heat to medium-low, cover, and cook for 15 minutes. Flip carrots and cook uncovered for another 15 minutes, or until fork-tender and slightly caramelized.

  4. Sprinkle with fresh herbs and squeeze juice from two orange wedges over the carrots.

  5. Toss well and serve, garnished with remaining orange wedges.
