Carrot Muffins With Walnuts and Cream Cheese Spread Recipe

Spiced carrot muffins, made with grated carrots and chopped nuts, are a moist treat often paired with an optional orange cream cheese spread.

Instructions

  1. Preheat the oven to 375 F (190 C) and line a 12-cup muffin tin.

  2. Cream butter with granulated sugar until light and fluffy.

  3. Beat the egg and 1 1/2 teaspoons vanilla into the creamed mixture.

  4. In a separate bowl, combine flour, baking powder, cinnamon, nutmeg, and salt.

  5. Alternately add the dry mixture and milk to the wet ingredients, blending well after each addition.

  6. Stir in shredded carrots and chopped walnuts.

  7. Fill the prepared muffin cups almost full and bake for about 25 minutes, or until a toothpick inserted into the center comes out clean.

  8. For the optional orange cream cheese spread, beat softened cream cheese with orange zest, 2 tablespoons confectioners' sugar, and a few drops of vanilla extract until light and fluffy; add more confectioners' sugar if desired, then refrigerate and serve at room temperature.
