Carrot Cake Oatmeal

Instructions

  1. Start boiling 1 cup of water with a pinch of salt in a small saucepan.

  2. Grate a peeled carrot into the boiling water.

  3. Stir in oats, vanilla, cinnamon, and optional raisins.

  4. Simmer, stirring frequently, for 5 minutes until oats and carrot are tender.

  5. Remove from heat and stir in brown sugar.

  6. Transfer to a bowl, then top with butter bits, optional brown sugar, and walnuts.
