Instructions

  1. Preheat oven to 350 F. Grease and line a 9x5-inch loaf pan.

  2. Whisk flour, baking powder, cinnamon, baking soda, salt, nutmeg, and cloves in a small bowl.

  3. In a medium bowl, whisk sugar, oil, and vanilla; then whisk in eggs and yolk one at a time.

  4. Fold the dry ingredients into the wet until a few streaks of flour remain, then fold in the grated carrots.

  5. Transfer batter to the prepared pan. Bake for about 1 hour, rotating after 30 minutes, until a tester comes out with moist crumbs.

  6. Cool in the pan for ten minutes, then remove and cool completely.
