Carrot Cake Cookie Sandwiches Recipe

Instructions

Preheat oven to 350°F and line 3 baking sheets with parchment paper.

In a large bowl, whisk together melted butter, sugars, vanilla, and eggs.

Whisk in baking soda, cinnamon, and salt.

Fold in carrots, then coconut and oats, followed by flour until just combined.

Scoop dough into 36 two-tablespoon balls on one baking sheet and chill for 30 minutes (freeze) or 45 minutes (refrigerate).

Divide chilled dough evenly onto the 3 prepared baking sheets.

Bake for approximately 14 minutes, rotating sheets halfway, until lightly browned.

Upon removal, lightly press each cookie to flatten, cool for 5 minutes, then transfer to a rack to cool completely.

For the filling, beat cream cheese and butter in a stand mixer until combined.

Beat in vanilla and salt, then gradually add sugar and continue beating for 30 seconds.

Flip half the cooled cookies and spread each with a generous tablespoon of frosting.

Top with the remaining cookies and press lightly to secure.

Refrigerate for 30 minutes to set the frosting before serving.
