Instructions

  1. Preheat the oven to 300 F and line a baking sheet with parchment paper. Use a y-peeler to create long, thin carrot strips.

  2. In a bowl, combine and whisk together soy sauce, oil, tahini, maple syrup, paprika, pepper, and liquid smoke, if using.

  3. Add the carrot strips to the marinade and toss to coat; let sit for 30 minutes at room temperature.

  4. Arrange the marinated carrot strips in a single layer on the prepared baking sheet, ensuring space between them. Brush tops with any leftover marinade.

  5. Bake for 20-25 minutes, or until browned and crispy, monitoring closely during the last 5 minutes.

  6. Allow to cool for a few minutes to crisp up. For extra crispiness, return to the oven for a short period if needed.
