Carrot and Pineapple Gelatin Salad
A sweet and tangy gelatin salad combines crushed pineapple and grated carrots with a lemon gelatin, cream cheese, and marshmallow mixture.

Instructions

Bring water to a boil for the gelatin.

Drain the pineapple, reserving its juice.

In a saucepan over low heat, warm the reserved pineapple juice, melt the marshmallows while stirring, then mix in the cream cheese until smooth; remove from heat.

Dissolve the lemon gelatin in the boiling water and cool it.

Combine the marshmallow mixture with the cooled gelatin; chill until it achieves an unbeaten egg white consistency.

Stir the drained crushed pineapple and grated carrot into the gelatin mixture.

Pour into an 8-inch-square pan and chill until firm.
