Instructions

  1. Preheat the oven to 300 F.

  2. Rinse carob pods, arrange them on a baking sheet, and roast for 40 minutes.

  3. After cooling, break the roasted pods into 2 to 3-inch pieces.

  4. Place broken pods in a large bowl, cover with water, and soak for at least eight hours.

  5. Strain the liquid from the soaked pods and reserve it.

  6. Measure the reserved liquid, add an equal amount of sugar, and whisk over medium heat until the sugar dissolves.

  7. Bring the mixture to a simmer, then cook, stirring occasionally, for 15 to 20 minutes until it reaches a maple syrup consistency.

  8. Remove from heat, allow to cool, and then transfer the syrup into bottles or jars.

  9. For long-term storage, process sealed jars in a boiling water bath.
