Instructions

  1. Start boiling water in a pot.

  2. Peel yuca, cut into 4-inch pieces, add to the boiling water, season with salt, and cook until fork-tender, about 20 minutes.

  3. Drain the cooked yuca and let it cool.

  4. Halve the yuca pieces, remove the tough spine, and cut into 1/2-inch strips.

  5. Heat 2 to 3 inches of oil in a heavy pot to 350°F.

  6. Fry yuca strips in batches until lightly browned, then remove with a slotted spoon.

  7. Drain on paper towels and season with salt and pepper.

  8. Serve with preferred dipping sauces.
