Caribbean Yellow Rice and Pink Beans

Instructions

  1. Heat olive oil in a large saucepan over medium heat, then fry sofrito for 1 minute.

  2. Add sazón, salt, beans, and rice; stir to combine and coat.

  3. Pour in water (or chicken broth), bring to a rolling boil, cook for 1 to 2 minutes, then stir the mixture.

  4. Reduce heat to low, cover tightly, and cook for 30 minutes without lifting the lid.

  5. Remove lid, fluff rice with a fork, re-cover, and let sit for a few minutes before serving.
