Caribbean-Style Black Beans and Yellow Rice

A flavorful Caribbean yellow rice and black beans dish is easily prepared with sofrito and sazon with annatto.

Instructions

  1. Heat olive oil in a pot over medium heat.

  2. Add sofrito and fry for 1 minute.

  3. Stir in sazón, salt, beans, and rice to coat the rice.

  4. Pour in water or broth, bring to a rolling boil for 1 to 2 minutes, then stir.

  5. Reduce heat to low, cover tightly, and cook for 20 minutes without lifting the lid.

  6. Remove lid, fluff the rice, cover again, and let sit for a few minutes before serving.
