Caribbean Rice and Black Beans

Instructions

  1. Heat vegetable oil in a large skillet over medium heat.

  2. Sauté chopped onion and bell peppers until translucent, then add garlic and cook for 1 minute.

  3. Add black beans, vinegar, Tabasco, and 1/2 cup broth or water.

  4. Bring to a boil, then reduce heat to low, cover, and simmer for 5 minutes.

  5. Add more broth or water as needed to keep beans moist.

  6. Stir in cooked rice, cumin, and oregano; heat through and adjust seasonings.

  7. Transfer to a serving dish.

  8. Garnish with fresh cilantro or sliced green onions.

  9. Serve with additional Tabasco.
