Caribbean Rice and Black Beans

Instructions

Heat vegetable oil in a large skillet over medium heat.

Sauté chopped onion and bell peppers until translucent, then add garlic and cook for 1 minute.

Add black beans, vinegar, Tabasco, and 1/2 cup broth or water.

Bring to a boil, then reduce heat to low, cover, and simmer for 5 minutes.

Add more broth or water as needed to keep beans moist.

Stir in cooked rice, cumin, and oregano; heat through and adjust seasonings.

Transfer to a serving dish.

Garnish with fresh cilantro or sliced green onions.
