Caribbean Fufu Recipe

A Caribbean adaptation of traditional fufu, similar to a dumpling, can be quickly prepared using a food processor.

Instructions

  1. Start boiling well-salted water in a large pot.

  2. Peel yams and cut them into 2-inch chunks. Add the yam chunks to the boiling water, ensuring they are covered by about 2 inches.

  3. Boil rapidly for approximately 20 minutes until the yams are soft.

  4. Drain the yams, reserving 2 cups of the cooking water, and allow them to cool.

  5. Mash the cooled yams with salt, pepper, and olive oil until a lumpy mixture forms.

  6. Transfer the lumpy yam mixture to a food processor or blender and pulse briefly on low speed to remove lumps; do not puree.

  7. Return the mixture to a bowl and beat with a wooden spoon until smooth and elastic. Gradually incorporate the reserved cooking water, starting with 1/4 cup, working the dough until it is springy, pliable, and cohesive.

  8. Form the fufu into equal-sized balls.
