Caribbean Cow Heel Soup Recipe

Instructions

Heat oil in a pressure cooker over medium heat.

Sauté onions and half the thyme for 2-3 minutes until translucent.

Add cow heel, season with salt and pepper, then sauté for 3 minutes.

Stir in water and a bouillon cube, then close and pressure cook for 30 minutes after reaching pressure.

Release steam, open the cooker, and add peas and additional water to achieve a soupy consistency.

Stir in the remaining thyme and cook on high heat until the peas soften (8-12 minutes).

Add okra, carrots, and dumplings, then cook with the lid slightly askew for 6-8 minutes until the dumplings are cooked.
