Caribbean Butterfish in Butter Sauce Recipe

Instructions

  1. Pat butterfish fillets dry, then season generously with salt and pepper.

  2. Heat oil and 1 tablespoon of butter in a large skillet over medium heat; sauté onions for 4 minutes until translucent.

  3. Stir in thyme, garlic, chili pepper, and a pinch of salt; continue to sauté for 1 minute until fragrant.

  4. Add water and bring to a boil over high heat; place fish in the pan and cook for 3 to 5 minutes while spooning sauce over it.

  5. Add the remaining 1 tablespoon of butter, reduce heat to low, and baste the fish with sauce for another 3 to 5 minutes until fully cooked.

  6. Stir in green onions, adjust seasoning as needed, and serve immediately.
